    Can this recipe be doubled?

      Hi, Karen, you can double the ingredients and bake it in two separate pans by dividing the batter equally. But that’s a lot of batter, and you run the risk of not properly mixing everything together. I’d recommend making the whole recipe twice in two different mixing bowls

    Hello, would the cake be stable enough after it cools to double it? To make a double layered sheet cake? I’m trying to make a cake big enough for 12 adults + 2 kids for a bday party

      Yes, it’s a very stable cake, so I wouldn’t worry about that. My much lighter crumb vanilla cake has been made into a wedding cake many, many times, so this one can certainly handle it.

      You’d have to convert the amount of cake to accommodate round cake pans, Debbie. Instead, I’d recommend using our classic gluten free vanilla cake recipe, which is already developed to be made in 2 round cake pans.
