About Nicole Hunn

Hi, I’m Nicole. I create gluten free recipes that really work and taste as good as you remember. No more making separate meals when someone is GF, or buying packaged foods that aren’t good enough to justify the price. At Gluten Free on a Shoestring, “good, for gluten free” just isn’t good enough!

I made these yesterday using some jarred pumpkin butter I received as a gift. Made the dough into balls and flattened rather than the log/slice techniques. I also browned my butter (overkill, perhaps) and they turned out beautifully. Pretty, chewy, and firm enough on the outside to stack and transport for holiday buffet! Thanks for the recipe that I know no one else will bring to the potluck! My husband loves them
