Wow- the cake is ridiculously good. I’m careful not to overcook my cakes and the timing listed in the recipe is really accurate. I can’t wait to take this to a birthday party. It is my gift to the birthday girl! This will be my go to gluten free cake recipe. My first one!

I couldn’t find the flours recommended but successfully used Pamela’s gf flour mix with the suggested cornstarch. Also, added 1/4 tsp almond extract because all of the non-gf funfetti recipes I researched had it. I also used 2, 9″ pans with success. It made a wider and shorter cake, but It was still excellent.
Wondering if there is a necessary modification for high altitude?
There’s nothing unique about gluten free baking with respect to high altitude baking. If you normally make adjustments, I’d make those.

what would 1.33 cups (10.66 fluid ounces) of buttermilk be in grams? That’s such an odd number. Thanks
Grams are a weight measurement, Kay, and buttermilk can vary pretty significantly in weight depending on consistency, so it’s not appropriate. That’s why I use a volume measurement, as is customary with liquids. 1.33 is another way of expressing 1 1/3, which is not odd at all.

Is there anyway to cut the sugar down to 1 cup. Even using alternative sweeteners cakes in my opinion for us to eat is way to sweet. 1 cup of sugar would be what we use.
Definitely not, Nina. There are two 8-inch cakes being made here, and sugar isn’t just a sweetener. It’s also a tenderizer. It sounds like you might prefer a low carb cake from another source.
