This gluten free vanilla crazy cake is made with no butter and no eggs, but it's still moist and tender and rises beautifully. What a crazy cake!

About Nicole Hunn

Hi, I’m Nicole. I create gluten free recipes that really work and taste as good as you remember. No more making separate meals when someone is GF, or buying packaged foods that aren’t good enough to justify the price. At Gluten Free on a Shoestring, “good, for gluten free” just isn’t good enough!

This cake is amazing. I made this for my daughter”s birthday and needed both gf and eggless. No one would know that though. I used the oil version beck didn’t have shortening. Avocado oil worked great. It was even easier too because I just whisked it all together. And I like Bundt cakes because they are also easier than layer cakes to frost.
The texture of this cake is so good. It’s like a coffee cake made with brown sugar… super moist with caramelized flavor. Thank you for sharing this.it is a keeper!
