About Nicole Hunn

Hi, I’m Nicole. I create gluten free recipes that really work and taste as good as you remember. No more making separate meals when someone is GF, or buying packaged foods that aren’t good enough to justify the price. At Gluten Free on a Shoestring, “good, for gluten free” just isn’t good enough!

These cookies are fabulous & the only recipe I use when I want a rolled cut out cookie. I use for Christmas cookies, valentines hearts etc. sometimes I make a simple vanilla frosting but I also melt & color Ghirardelli White Melting Wafers and dip the cookies for Valentines.

So great to hear, Janie! This is a bit of an under-the-radar recipe, so I’m always glad to see it get a bit of love. Thanks for sharing your experience!

Came out very bready textured. Flavor was good, but texture was terrible. Followed the recipe perfectly.

You did not, in fact, “follow the recipe perfectly” if those were your results. When baked goods come out grainy like that it’s sometimes because you didn’t fully incorporate granulated sugar into the wet ingredients, but in gluten free baking it’s usually because you chose a low-quality gluten free flour blend with gritty rice flour. I do everything in my power to warn against that.

Mine came out perfect the first time! However, I used 2t of cream of tartar instead of meringue powder as I didn’t have any.
