To make light and fluffy pancakes, I recommend using a gum-free, gluten free flour blend. Blends containing too much xanthan gum lead to a gummy, tough pancake.

Pumpkin pie spice is just a blend of warm fall spices. You can buy it or make it yourself with  the components.

Let's get started!

Ingredients 

- Pumpkin Butter

- Unsalted Butter

- Milk

- Eggs

- Brown Sugar

- Gum Free Gluten Free Flour Blend

- Baking Powder

- Pumpkin Pie Spice Blend

- Salt

- Neutral Oil or Butter

1. Combine wet ingredients

2. Whisk until smooth

3. Add dry ingredients & whisk

4. Pour batter on hot griddle 

5. Flip & finish

6. Serve & enjoy!
