To Make a Water Roux

It’s just a simple cooked mixture of gluten free flour and water. It can be made days ahead of time and stored in a sealed container in the refrigerator.

Ingredients 

– roux – all purpose gluten free flour blend – xanthan gum (omit if your blend already contains it) – cream of tartar – granulated sugar – instant yeast  – kosher salt – apple cider vinegar – egg at room temperature – warm milk (about 100°F) – unsalted butter melted and cooled
