1. Mix pumpkin puree, sugar, brown sugar, molasses, melted butter and egg and mix until smooth.
2. Add GF flour, xanthan gum, salt, baking soda, pumpkin pie spice, and mix until fully combined. Chill for easier handling.
3. Scoop, roll into ball, flatten, and shape cookie dough. Bake.
4. Dip in simple sugar glaze, and allow to set fully before serving. Share and ENJOY!!
