Easy Gluten Free  Carrot Cake  (or Cupcakes!)

Ingredients

– All purpose GF Flour Blend – Xanthan gum omit if your blend already contains it – Baking soda – Baking powder – Kosher salt – Ground cinnamon – Granulated sugar – Light brown sugar – Neutral oil – Eggs – Apple cider vinegar – Milk – Chopped pecans – White chocolate chips – Peeled and grated carrots

Let's Get Started!

1. Combine dry ingredients

2. Add carrots, oil, eggs, and milk to dry ingredients

3. Mix well and add pecans & chips

4. Divide into two  8 inch pans & bake

5. Frost first layer

6. Frost second layer

7. Serve & Enjoy!
