In a large bowl, combine GF flour, xanthan gum, cornstarch, baking soda, baking powder, salt, cinnamon, shredded carrots, and raisins.
In a separate bowl, beat the eggs, oil, granulated sugar, brown sugar and crushed pineapple until combined.
Create a well in the center of the bowl of the dry ingredients. Pour in the wet ingredients and mix to combine well. Pour into lined cake pan and bake.
