Anodizing is not a chemical coating. It is an environmentally-safe process that contains no chemical additives, dyes, CFC’s, PTFE’s or PFOA’s. The anodizing process is the reason Fat Daddio’s Bakeware will never chip, flake, peel, pit or rust. |
Unlike conventional aluminum or steel bakeware which may react poorly with acidic foods, the non-reactive surface of Fat Daddio's Anodized Aluminum Bakeware makes it compatible with a wide-variety of recipes including those with citrus or tomato-based ingredients. |
Fat Daddio's ProSeries bakeware and pastry tools are trusted every day by baking enthusiasts and bakeries around the world for professional results. It is built to last through daily use in both the home kitchen and commercial establishments. |

Oh, about the pan: it's a nice weight and very rigid due to being stamped from a sheet of aluminum. The corners have very tight radii for a stamped pan and are straight up and down (probably important if you make layer cakes). The coating has a little tooth to it (i.e. it isn't slick or slippery feeling) that made it easy to prep the pan for baking. The first batch of brownies came out without any difficulty and the crust was even across the bottom and around the edges of the pan. It washed up easily after a short soak. Now, if I could figure out how to fit it into the cabinet with the rest of the pans...
