Vegan Power Bites – a sneak peek

A sneak peek at the Vegan Power Bites in Gluten-Free on a Shoestring Quick & Easy more »

I’m not Paleo — but it sounds exciting. Like an all-access pass to the Museum of Natural History. After hours. I’m fairly certain it would make me fat, thought, and I’d miss cake that wasn’t made of almonds. But still. Excitement.

I’m not so into Raw Food, since I really like Cooked Food. Except in a salad.

I’m no Vegan — but it sounds virtuous. Like maybe it comes with bragging rights.

I do dabble a bit in vegan virtuosity. I have an Isa Chandra Moskowitz book and everything. We totally sometimes do Meatless Mondays (when I remember not to cook the beans with salt pork).

I am gluten-free, and that’s that.

I’m really digging all the power bar type deals I’ve been working on the for the second cookbook, Gluten Free Shortcuts. It’s great to wake up in the morning and have a protein-rich breakfast all ready to go. Shortcut!

These little Vegan Power Bites can be kept raw, but I like to bake ‘em for a bit so they’re not at all sticky. They can be little bites…

… or they can be bars (but I’d only make them bars if you’re gonna bake ‘em or they’d be hard to slice).

I can’t wait to share this recipe with you — and so many other ready-in-a-flash meals, treats, and breads — in the Fall 2012.

In the meantime, how about some Granola Bars from this Summer? Or the Homemade Crunchy Granola on page 72 of my Cookbook?

Love,
Me

P.S. UPDATE: The new cookbook, which ended up titled Gluten-Free on a Shoestring Quick & Easy, is ready for you! Please support the blog and pick up a copy!

please santa, or hanukkah santa, I would like a kitchen with less humdrum and more shelf space. Or a shelf. That would do. When’s that 2nd book coming out and are you doing a tour? Cause you totally would have to come to northern California, right?!

    • Nicole

Oh, Lisa, I think you’re only going to get that from Hanukkah Santa if you sing your request. Think “Santa Baby.” And slut it up.
I have a lot of counter space, and quite a number of cabinets in my kitchen, but if I had it to do over again, I’d have left some open shelving.
Second book coming out Fall 2012. Hah! A tour! Publishers pay for nothing. If I came to Northern California, I’d never leave. My whole life (which by the way has been lived on the East Coast), I’ve felt like I’m meant to be from California. I don’t just want to live there. I want to be from there…

Wish i could get Scott to eat oatmeal again..last try resulted in a very, VERY bad reaction…so he’s gunshy. (but I may try ‘em!) Looking so forward to the new book! Happy Tuesday!

    • Nicole

Oh that is such a shame, Pam. I love oats. So hearty.
You could probably make something like this with crushed corn flake cereal in place of the oatmeal. I bet that would work.

I follow a fairly paleo diet myself–jumped on the SCD bandwagon almost a year ago when I continued to have lingering digestive issues that going gluten-free alone didn’t cure. I miss being able to make your recipes! I love when you post a recipe that is easily convertible to my diet–much like the power-bites you talk about here! However, I’m completely grain-free, so oats and corn flakes are out of the question for me–but I already have my brain working on possible substitutes. Thanks for all your amazing recipes that inspire me to expand my baking repertoire!

And P.S. A Paleo/grain-free diet would SOOOO not make you fat–but I do really miss baked goods not made with almonds :)

    • Nicole

      Hi, Sarah,
The Specific Carbohydrate Diet is pretty strict, but I know it has done wonders for many people. Glad you’ve found something that works for you!

Almond flour is AOK on PALEO

Looks yummy! I’m intrigued by the idea of the Paleo diet, but don’t think I could be totally “true” to it b/c I’d miss all the things that I COULD have but they say I can’t. Still, I LOVE the things made with almond and coconut flour. These look wonderful! I’m eagerly awaiting the cookbook. You could come visit MN – I guarantee you wouldn’t be tempted to stay for long in the dead of winter… :-)

Love the p.s. idea–I’m still spinning around for stocking stuffer stuff. Would love to land on some handy dandy kitcheny stuff to plunk in those stockings….looking forward to it! xoLinda

    • Nicole

      Hi, Linda!
These things are definitely stocking stuffer type kitcheny things. I will work on it. ;)

  • Ashley

Hey Nicole! I’m hankering to make sugar cookies this Christmas do you have a good recipe for them?

    • Nicole

      Hi, Ashley,
I don’t have a recipe for sugar cookies on the blog. There is one in my cookbook on page 208. :)
      xoxo Nicole

      • Ashley

Thanks I’ll have to go steal the cookbook back from my Mom Lol! She loves it too and while I was staying over for Thanksgiving begged me to let her borrow it for a little while. Now I know that she’s getting her own for her birthday from me :)
P.s. I can’t wait to try your new cookbook coming out next fall!

        • Nicole

Maybe she can just dictate the recipe to you, Ashley?
Thanks so much for your excitement about the new book. I’m excited, too! Lots of good stuff.
          xoxo Nicole

  • Laura Brabin

    Hi Nicole:
You may want to check the spelling on one of the words in your comment from today.. could you be trying to say.. ‘shut’?
Just in case it was a slip of the typing finger…

    • Nicole

      Hi, Laura,
Do you mean where I said “slut it up”? Nope. I meant it just like that. Like “vamp.”
      Nicole

  • Darlene

Hallo. I wanted to rate your egg nog cookies but for some reason comments are closed over thar. Sadness. I made them to give to friends. They are so good I’m rethinking some of my friendships. Many aren’t gonna make the cut so it seems I’ll have some extra cookies for myself. :)

    • Nicole

      Hey, there, friend,
New comment policy. Comments are open for the week in which the post goes up, and close the following Monday. Too harsh? It’s too hard to keep up with questions on old recipes, and there’s also the Community site now for that. Makes things lots easier for me. Sorry. :/
So happy to hear that the cookies were good enough to have you rethinking the important relationships in your life. I call that success, by any measure. I gave almost all those cookies away (to my husband’s work employees, to my neighbors), and I’ve been kicking myself ever since.
      xoxo Nicole

      • Darlene

No, not harsh at all. Makes sense. But I couldn’t find the community site or a link to it anywhere. Sometimes I wish someone else could see the world through my eyes for a day and maybe tell me why I keep losing things. Like that community site for instance. Anyway, maximum stars for those cookies. :)

        • Nicole

You and me both, Darlene. I can’t even keep my 3 kids straight — birthdays, school parties, I have no idea what’s going on.
Here’s the Community Site. There’s a link in the lefthand sidebar below “Welcome,” and if you click on “New Here” in Welcome, there’s another link. It’s just the site name /community. :)
          xoxo Nicole

  • http://www.heathersblog-o-rama.blogspot.com Heather :) :) :)

I’m not vegan. I totally believe in eating meat…BUT if it tastes good, I’ll eat just about anything…as long as it’s gluten free now :) :) These look really good ;) :) I’m putting this in my recipe file :) Love and hugs from the ocean shores of California, Heather ;)
