Polenta Pizza

Combine these Ingredients in a medium saucepan & boil:
2 1/2 cups stock or milk or water
2 tbsp unsalted butter
1 tsp. kosher salt

Lower heat to a simmer.

Add this ingredient slowly, whisking constantly:
1 1/4 cups cornmeal

It will come together suddenly. It’s polenta! Remove from heat. Spread polenta on bottom of a greased 9″ springform pan, pushing into edges to create a raised edge.

Cover polenta with some tomato sauce & some cheese, and whatever else you like.

Bake at 400 degrees until the crust is a bit browned, the cheese melted. It cools quickly. Pop the sides, slice into wedges and….

I have Bob’s Red Mill Corn Flour. Will that work instead of corn meal?

Hi, Brittany!

Yes, definitely you can use corn flour. It is ground more finely than cornmeal, so it will have a slightly different texture. Some people prefer it to cornmeal, since it will create a smoother product. It will work great! I am HUGE fan of all things corn. Naturally gluten free, rich natural flavor, very versatile. Next time, try making the polenta a bit thicker (try a smaller sized pan, perhaps) and you should be able to pick it up by the slice to eat it! I’m glad you enjoyed it…

Hi, Nicole,
I have an idea: it would be fun to put taco ingredients on top of this. I haven’t checked but am guessing that there is gluten in taco flavoring mix, but it’s easy to get the same taste by using cumen. To make taco meat, even before the GF days, I brown the meat with onions, worsester sauce, salt, pepper, and cumen. We like heat so I will add red pepper flakes as I’m browning the meat. And, or I will add a small can of green chilis and cook until the liquid is out.

So I will put meat, tomato sauce, and cheese on top and then put in oven to get melty. Then I would cover with shredded lettuce, raw onions, tomatoes and sour cream. Sounds yummy to me.

Hi, Mera,
It doesn’t take very long at all to bake. If you like a more dense crust, you can blind bake it by baking just the crust in the oven for about 7 minutes before covering it with any toppings, then removing it from the oven, adding toppings, and baking for another 5-10 minutes, depending upon whether you like the cheese browned well or not. I hope that’s helpful.

Ok…so I made this today as a taco pizza and it was FABULOUS!!! OMG!!! I baked the polenta at 400 for about 6 minutes then added a layer of fat free cheese…melted that for about 2 minutes then added salsa and taco seasoned hamburger…baked for about another 5 or 6 minutes, took it out of the oven and added shredded lettuce, more fat free cheese, tomatoes and black olives and a little more salsa…sour cream and guac would be good too but I didn’t have it! I will DEFINETLY be making this again!! Thanks for a GREAT idea!!

BTW….I just bought your book at Sams and can’t wait to try MANY of the recipes….I am sooo excited I want to make them all….today!! :0)

Thanks for your sweet comments! I tried to go on Amazon and create a review for you for your book however it wouldn’t let me do so as I haven’t purchased anything off of Amazon. I will try to find out my husbands Amazon account info and do it under his name when he gets home! I have LOTS of gluten free friends that I am often in contact with and also teach spin class at our local gym so I will definitely give you a shout out in my classes. Lots of gluten free folks there…some by choice..some by necessity!

I am a Mom of 5 kiddos ages ranging from 8-19 (3 third graders!!) so you can imagine that I have to get pretty creative to make something that they will ALL eat! Probably why I’m not afraid to jump in with both feet! If I make something that tastes awful…I just send it down the drain before they ever know and quickly throw together an old stand-by!! :0) Thats my trick….then I get right back to it the next day and try try again!! LOL Having to go gluten-free has been my challenge for the last year and a half and I am finally feeling fairly confident in my endeavor!! Your book had me cracked up at many points and held my attention very well which isn’t easy to do!!

Thanks for all the work you do on this website. I am super excited to go through your past blogs. I have been on here the last couple of hours playing around and have found all kinds of fun to try! You are an inspiration! Like I said I will try again on the review on Amazon when I can get ahold of dh’s account info!

Thank you so much for spreading the word about the book. I really appreciate that! It sounds like you really have your hands full with 5 kids. I only have one third-grader (my other 2 are younger), and that’s enough! You should have tons of new “stand-bys” now, and hopefully you won’t have to toss anything else down the drain. I get really upset when something doesn’t turn out, but I’ve already done the experimenting (and the kid-taste-testing!), so I hope things go smoothly for you from here on out.
