These have to be healthy, right? Didn’t Wilford Brimley tell us to eat oatmeal and stuff? He made us feel almost patriotic for eating oatmeal, and like Benedict Arnold if we didn’t. That was brilliant. Probably smoke and mirrors, but brilliant all the same.

You can, of course, play with these cookies to make them just to your liking. Dial up the cinnamon, replace the chocolate chips with more raisins or with chopped pecans or walnuts, you name it. It’s a cookie! The beauty of baking things yourself, other than being much more tasty and much much more inexpensive than buying cookies ready-made, is that you are The Boss. Forget Bruce Springsteen. It’s you! The buck stops right here.

Oatmeal Cookies
Ingredients
1 1/2 cups Cream Hill Estates GF Rolled Oats
3/4 cup Bob’s Red Mill GF All Purpose Flour
1/3 teaspoon xanthan gum
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1 stick unsalted butter, at room temperature
scant 1/2 cup granulated sugar
1/2 cup packed brown sugar (light or dark)
1 teaspoon vanilla extract
1 large egg, lightly beaten
1 cup semisweet chocolate chips
1 cup raisins (only good ones, or just double up on the chocolate chips)

1. Preheat oven to 350 degrees.

2. In a medium bowl, combine the oats, flour, xanthan gum, baking soda and cinnamon. Set aside.

3. In a large bowl, cream the butter and sugars until light and fluffy. Add the vanilla and the egg, and mix well. Add the dry ingredients to the wet mixture, reserving a few tablespoons of dry ingredients, and mix to combine.

4. Add the chocolate chips and raisins to the reserved dry ingredients, and toss to coat. Fold the chips and raisins into the cookie dough until evenly distributed.

5. Drop the cookies in about 1″ balls onto baking sheets lined with parchment paper (or greased foil). Bake at 350 degrees for about 15 minutes or until they start to brown around the edges. Cool on the pan for at least 10 minutes, then transfer to a wire rack to cool completely.

These freeze really well, and they are nothing if not toothsome. Enjoy!

Oh YUM! In my pre-GF days, any leftover cookie crumbles make awesome ice cream toppings. I can’t wait to make these!

I am wheat intolerant, so I modified these a bit using Spelt Flour. They are delicious! Thanks for the awesome posts!

I apologize that the recipe wasn’t more clear. I have edited the flour description to indicate “Bob’s Red Mill GF All Purpose Flour.” Everything on this site is gluten free, so spelt flour (a wheat species) would not be appropriate for anyone on a gluten free diet. I apologize for the confusion!

The Cream Hill Estate GF Rolled Oats are delicious, and good for anything – definitely breakfast oatmeal. I hate quick oats, anyhow. They taste like paste, and don’t really hold any sort of flavor. These are delicious. Enjoy!

Hi Nicole/everyone –

So I ordered the Cream Hill Estates Lara’s Rolled Oats from Amazon (your link) they have – 1.1-Pound Box (Pack of 8), $36.72. I’d never bought food from Amazon before… But I can’t find oatmeal anywhere and miss it every single morning! So! I decided to buy this oatmeal for $4.60 per pound. Wow! I used to buy regular, organic for about $1.20 per pound… so that’s $3.39 per pound more. So anyway – I decided to do it. It took about 2 weeks for it to arrive and there was only one box (instead of 8). I just called and they’re sending 8 more boxes (so I got one free – nice!).
Does anyone know where I can get cheaper GF oats for the future?

Hi, Cari,
My husband, Brian, is on the case. He’s going to research this for you and report back. We know that there are now 5 companies that make reliably gluten free oats, so we should be able to find something less expensive (although they will always be more expensive than conventional oats, at least until the concept of truly gluten free oats really catches on and becomes more available, since many people are very skeptical that there is such a thing as gf oats). You should also post this question on the facebook fan page to “crowd source” there!

did you ever find out more about gf oat prices. We tend to use Bob’s Red Mill. I know many use McCann’s without a reaction, but I know they don’t test them, so it’s a risk. Which ones are the best deal???

Wow!!! Please send a thank you to Brian!!!!

We’ve been eating the Cream Hill Estates Lara’s Rolled Oats (since I ended up with about 9 pounds!). It’s ‘ok’. It seems very finicky. I do 1 cup water to 1 cup oats and its pretty gewy. I can’t make 2 cups water and 2 cups oats at the same time – comes out like glue.

I thought I’d try the Bob’s Redmill next since they have that at our Whole Foods. But I’ll compare prices Brian gave! If anyone finds a fab(ulous) oatmeal-oat – I’d LOOOOOVE to know! Or for that matter… another great breakfast that will tide me over like oatmeal does.
