Sweeeeet potato soup
I’m almost embarrassed to post about this soup. It’s so easy. But I’ll be honest. Years and years ago, when I still could not cook my way out of a paper bag, I made butternut squash soup. I followed the recipe directions to a tee. I was meticulous. And I was terrified! Only so many cups of this, not too much of that. My only experience was in baking, not in cooking. Baking is generally precise. It’s a balance. It’s chemistry. Cooking — different story entirely. But if you don’t know what you’re doing, you stick to the recipe & pray for a miracle. Looking back, the soup was amazing. I know this, because I was amazed. But looking back with greater clarity, and the benefit of hindsight, it was no big freaking deal. And it was naturally gluten free, to boot.
I make sweet potato soup simply. I peel & dice 5 pounds of sweet potatoes. The smaller the dice, the quicker it cooks. I pile them into a large pot (at least 5 quarts — if your pot is smaller, use fewer ingredients), along with 2 small or 1 large yellow onion, also diced. Then add kosher salt, fresh ground black pepper & sprinkle some ground cinnamon to taste (really, to smell) and fill the pot with stock, leaving about 1″ at the top of the pot. If you don’t have stock, water really works just fine. Straight from the tap.
That’s it. Just place it on the stovetop over medium high heat until it boils, then lower it to a gentle boil. I generally cook it uncovered since that allows it to reduce further and concentrates the flavor. I then blend with an immersion blender and serve. It makes a nice, thick & hearty soup, and it’s easy for kids to eat on their own without decorating their shirtfronts (a big winner in my book).
If you’re feeling particularly decadent, add some pure maple syrup. Not too much. It’s soup. Not flapjacks. Or pancake muffins. Anyone ever try the pancake muffin recipe I posted a few weeks ago? You never call, you never write…..
Back to the stopu. It also packs tremendous nutritional punch, for relatively few calories. And it’s super satisfying. Love it.

Just discovered your blog. Awesome recipes. I would like to know if you have a good gluten free recipe for empanada shells (or are they the same as your hot-pockets)? I think you mentioned empanadas somewhere down the line in your wonderful list of recipes. Thanks!

I am coming up on the deadline for delivering the manuscript, and the publisher is requiring that almost all of the recipes have to be new (not yet on the blog). Love, love, love your site. Have an extra tricky son to cook for as he has been diagnosed with “Leaky-Gut Syndrome” and is now on a gluten, dairy, and soy free diet. I made him your pancake muffins yesterday using rice milk and they turned out great! He had 2 for breakfast this morning. I am currently looking for new main dish ideas (without cheese or dairy). Check out the Plum Gallette/Plum Crumble recipe. The gallette has a recipe for pastry crust. To make it dairy free, just substitute a solid soy butter, like Earth Balance sticks. Enjoy!

I have been dairy-free/gluten-free, but never egg and corn free. I know that Ener-G makes an egg replacer that works very well. Maybe you could try that. Any nondairy milk substitute will work, as long as it’s not nonfat.
